Luxury: Staub Cast Iron Round Cocotte
I prefer Staub to Le-Creuset. Their dark, non-enameled interiors, brown foods better and don't show stains. Additionally, they have an excellent lid design, are beautiful to look at, and come in a beautiful assortment of colors in an array of sizes. I personally love the 4 qt size. I use mine for every week for making sourdough bread as well as large batches of rice. Click through the link and have some fun seeing all the color options.
Essential: Lodge Enameled Dutch Oven
Lodge makes an excellent dutch oven. They run 25% to 35% of the cost of the Staub and also come in a variety of colors. I find that I use my Staub 4 qt more often than my huge 7.5 qt Lodge but, at times, I do need the Lodge for larger recipes like soups and stews in large batches and pot roasts. My recommendation is to get either a 7.5 qt or 6 qt Lodge for $80 to $100 and pick up the 4 qt Staub for around $200 when your budget permits.
