Sheet Pans aka Cookie Sheets
Unheralded, sheet pans can be the star of many meals. We all know the term "One Pot Meal" but for some reason "One Sheet Meal" just hasn't caught on. Hmm. Excellent sheet pans shouldn't have non-stick coatings or be textured. They should heat evenly, avoid warping, and be reasonably priced.

Luxury: Mrs. Anderson's Big Baking Sheet Pan, 16 x 22
At around $30, think of this as less "Luxury" and more "Awesome". These pans are custom sized to be the largest possible sheet pans to fit in a normal 30 inch oven. That is 50.4% bigger than your standard 13 x 18 pan, allowing you to fit an entire meal on one tray or cut down three trays of cookies to 2. I recommend buying one of these along with a silicone baking mat and a wire rack made to fit. Please note, they are made for a max temp of 480 degrees, meaning they won't work under the broiler.
Essential: Nordic Ware Naturals
These pans do everything well. At only $30 for a set of 3 pans, they avoid warping, heat evenly, and resist sticking. If you are buying bakeware for the first time or replacing a bunch of old items, considering buying everything from this line. A few years ago we tossed our warped, scratched, and peeling hodge podge of a collection and replaced it entirely with Nordic Ware Naturals. They match, look nice, nest, and perform well. You can't go wrong with this line and you won't have to feel guilty for making your kids muffins out of that old, flaking, formerly non-stick tray that you know you should toss.
